Word Processing / Text Editing
 
Microsoft Word
A powerful word processor. Probably even too powerful. Word 6 has many features found in full-blown page layout programs, such as PageMaker or Quark Xpress. Because of this extra baggage, which isn't used 90% of the time, it is very sluggish. If you're looking to write a letter or a fax, consider using version 5.1, which is much leaner, and is still installed because some (myself included) prefer it over version 6.

If you're just looking to edit text, without all the frills, check out BBEdit Lite-it's fast, small, and has lots of nice features.

BBEdit Lite
Fast, small, lots of nice text-editing features. Notice that says "text editing", not "word processing". Doesn't handle graphics, tables, multiple column printing, etc. But is ideal for viewing and printing sequence alignments, or working on HTML.

SimpleText
Designed primarily to be able to read 'Read Me' files that usually include last minute information about software. Small, not very full-featured. It can only handle <32k of data, which comes along surprisingly easy. I don't recommend trying to do anything serious with it.

Tex-Edit
A freeware improvement on SimpleText. Some nifty features, like drag-and-drop text editing. Still limited to 32k of data, though.
